Lettuce prices have spiked due to supply and demand difficulties during the colder months

But Horticulture New Zealand says growers don't actually make a lot of margin out of lettuce and the margin is greatest when supply volumes are high.
Chief executive Mike Chapman says it's a really tough time for growers when supply is short.
He says everything costs just as much - depending on the supply chain - despite the volume produced and profit made.
