The airline says cabin crew will keep interaction with passengers minimal - and will have crew decked out in protection gear.
NZ1942 has touched down in Hong Kong - and is expected to bring 263 evacuees back to Auckland by tomorrow afternoon.
Aviation union, E tu, says crew safety must remain paramount.
It's vowing to work with Air New Zealand to deal with any unexpected changes that could arise.
Passengers will be screened on arrival before being transferred to Whangaparoa for quarantine.
