A source told Us Weekly magazine: "It's very, very new. They're having fun and getting to know each other."
The new couple were even spotted dining together at Li'L Dizzy's Cafe in Louisiana on Sunday (06.07.14) after spending the weekend celebrating Independence Day.
An onlooker explained: "They were very friendly and took pictures with other diners. They held each other and kissed several times."
The news that the stars are dating doesn't come as a complete shock as Joe recently admitted that he has a crush on Sofia, 41, and thinks she's his dream woman.
Asked who he'd like to date, he said previously: "Girls that do squats
- I love a butt. Sofia Vergara, that's it. She's got that Latin thing going. She's got the butt, she's got curves, she's got a beautiful face, beautiful hair, just gorgeous and she's feisty."
Meanwhile, the pair's romance may face disruption from Sofia's ex-fiancé Nick as it was claimed earlier this month that he was trying to woo the beauty back.
