The six Harley Davidsons were seized in 2019, through Operation Nova, a crackdown which saw 18 people charged, and 2.6 million dollars of gang assets restrained, excluding the bikes.
It's the first time Police have applied to turn assets into scrap metal.
Police Commissioner Andrew Coster says the design of the bikes, and personalised plates, are linked to the gang.
He says they understand the risk the bikes could fall back into the wrong hands, so the right course was to destroy them.
