    A dessert inspired by Queen Elizabeth and Prince Philip's wedding menu has been named the official Platinum Pudding

    A nationwide contest took place to find a recipe to celebrate the 96-year-old monarch's Platinum Jubilee next month and Camilla, Duchess of Cornwall, announced on 'The Jubilee Pudding: 70 Years in the Baking' on Thursday (12.05.22) the judging panel chose Jemma Melvin's lemon Swiss roll and Amaretti trifle as the winner, beating out over 5,000 other entrants


    Jemma, 31, designed her dessert after learning the queen and her late husband had tucked into lemon posset when they wed in 1947 and also sought inspiration from her own grandmothers.

    She said: "My gran taught me how to bake but my nan's signature dish was a trifle.

    "A wonderful, poised lady, just like our Queen, she used to make a wonderful trifle, but hers was laced with sherry and decorated with kiwi fruit and flaked chocolate but this trifle is elevated and fit for the queen herself...

    "I found out that the queen had lemon posset at her wedding so I decided the pudding had to be based around the lemon flavour.

    "I think it'll be perfect for Jubilee celebrations as it's refreshing for summer. It can also be made in a large dish or in individual portions - whichever you'd prefer.

    "The thought of people recreating my pudding, especially around the Jubilee, is just a total pleasure."

    The copywriter submitted two recipes, a completely homebaked version and a "cheat version" to streamline the steps for less confident bakers.

    The trifle has a lemon curd Swiss roll on the bottom, followed by different layers including St Clement's jelly, lemon custard, amarettti biscuits, mandarin coulis, and whipped cream, with candied peel, crushed amaretti biscuits, and chocolate shards on top.

    Chair of the judges Dame Mary Berry said: "It's absolutely wonderful, I think Britain is going to be so delighted and the queen too."

    A spokesperson for the competition - which was run by Fortnum Mason and The Big Lunch Charity - added: "Her winning recipe becomes part of British food history, following in the footsteps of the Coronation Chicken and the Victoria Sponge."

    The competition asked home bakers to create a recipe "fit for a queen" with a "memorable story" and the "potential to stand the test of time and become Queen Elizabeth II's Platinum Pudding".

    A shortlist of 50 was chosen from the written recipe, before five finalists were chosen to create their desserts in real life for the judges.
